Warming vegetable soup

Gloomy winter days like these are best spent under a blanket and with a delicious cup of soup on your lap. This delicious, warming soup contains six different vegetables and fresh herbs. Filling, tasty and rich in nutrients!

Ingredients

  • 200 g red lentils

  • 3 Roma tomatoes

  • 1 winter carrot

  • 1 stalk celery

  • 2 red onions

  • 1 red bell pepper

  • 2 garlic cloves

  • Vegetable stock cube

  • Piece of ginger

  • Bay leaf

  • Thyme

Preparation

Chop the ginger, garlic and onion finely and fry for a few minutes in a pan with a little oil. Then cut the tomatoes, carrot, celery and bell pepper and fry for a few minutes.

Prepare the stock by dissolving a vegetable stock cube in one and a half liters of water and add it to the pan. As well as the bay leaf and thyme. Bring to a boil and simmer for 20 minutes. Depending on how thick you want the soup, add a little more water.

Finally, remove the bay leaf and puree with an immersion blender. Bon appetite!
