Vegan choco mousse

In most chocolate mousse recipes, granulated sugar, whipped cream and eggs are invariably in the ingredients list, but not in this recipe! The basis of this recipe is simply dark chocolate and aqua faba. What is aqua faba? It’s the liquid from a jar of chickpeas is ideal for making mousse. This recipe is for about three servings.

Ingredients

  • 100 grams of dark chocolate 70%

  • Liquid from 1 jar of chickpeas (400g)

  • Spices of your choice: cinnamon, cardamom, vanilla or ginger

  • Pinch of salt

  • Coconut flakes

  • Optional maple syrup

Preparation

Melt the dark chocolate au bain marie and keep a little block of chocolate aside for decoration. Meanwhile, beat the chickpea liquid with a hand mixer until stiff, about 8 minutes, until a firm white cloud forms.

Stir the soft chocolate and the desired spices through the aqua faba and divide between three bowls. Optionally, add maple syrup if you like the mousse to be sweeter. Let it set in the fridge for about two hours.

Chop or grate the piece of dark chocolate over the mousse and serve with coconut chips!
