Sweet potatoes are tasty and healthy: they contain fiber, calcium, magnesium and vitamin C. The carbohydrates of sweet potatoes consist largely of inulin. Inulin has many health benefits, one of which is to prevent type 2 diabetes by preventing blood sugar levels from rising and preventing the body from making too many fats. So it's not a bad idea to make a delicious soup from sweet potatoes!
INGREDIENTS for 4 persons
1 kg of sweet potatoes
1 onion
700 ml vegetable broth
125 ml orange juice
250 ml coconut milk
2 cloves of garlic
Thumb of ginger
1 tsp turmeric powder
2 tsp curry powder
½ tsp chilli powder
a handful cashew nuts
some fesh coriander
PREPARATION
Peel the sweet potatoes and cut into cubes. Finely chop the onion. Heat a tablespoon of coconut oil in a soup pan and add the onion and garlic. Bake for a few minutes and then add the ginger (grated), turmeric, curry, and chilli powder. Bake for another minute.
Then add the sweet potato and vegetable broth and bring to boil. Let it cook for at least 15 minutes. Then add the orange juice and coconut milk and remove from the heat. Puree with a hand blender until smooth.
Garnish with chopped cashew nuts, fresh coriander and a pinch of cinnamon.
