Succotash

Succotash is an American dish that comes from the indigenous peoples of North America. The word is a corruption, meaning 'a dish of boiled or stewed corn'. A typical classic Succotash contains corn and lima beans. The dish is suitable for a side dish that is special enough for a feast, yet easy enough to prepare and serve any day of the week.

Ingredients

  • 300 grams of lima beans

  • Two onions

  • Two cloves of garlic

  • 250 grams of cherry tomatoes

  • One tablespoon of sugar

  • Eight sprigs of thyme

  • One small can of corn

  • 50 grams of bacon, cut into slices of 2 by 2 cm

  • Two tablespoons of butter

  • Juice of half a lemon

  • Pepper and salt

Preparation

Fry the bacon in a little bit of olive oil and fry the onion and garlic in the same pan. Add the butter, add the lima beans and stir well for one to two minutes. Meanwhile, cut the cherry tomatoes in half and add them together with the thyme and the tablespoon of sugar. Place the pan over medium heat until the tomato is boiling, about 10 minutes. Then add the corn. Season with salt, pepper and juice of half a lemon.
