Scrambled tofu

If you eat plant-based for whatever reason, you may miss your eggs. But you don't have to, because scrambled eggs, for example, can be copied very well with tofu! Try this recipe. It looks a lot like a scrambled egg, but it is vegan. Very tasty on toast with a few slices of avocado. Mmm...


  • Block of tofu

  • 1 onion

  • 1 tsp Garlic powder

  • 1 tsp Turmeric

  • 1 tsp Paprika powder

  • 2 tbsp nutritional yeast flakes

  • Pepper and salt

  • Fresh herbs of your choice, for example coriander, parsley or chives

  • Sourdough bread (uncut)


Drain the tofu and squeeze the block between your hands and fingers to squeeze out any excess water. You can also put the block of tofu between kitchen paper and put something heavy on it. That way you also get moisture out.

Chop the onion and fry for a few minutes in a pan with olive oil. Then crumble the tofu over the pan. You can also put the tofu in the pan and crush it with a potato masher. Fry the tofu and stir frequently. Add the garlic and paprika powder, turmeric and nutritional yeast flakes. Do you like spicy? Then add chili flakes! Fry for a few more minutes and keep tossing the tofu. Season with salt and pepper. Finally, spoon in the fresh herbs.

Cut a few thick slices of the sourdough bread and roast them briefly in the pan if you prefer crispy. Divide the scrambled tofu over the toasts. Enjoy your brunch!

Tip: add a few slices of tomatoes or avocado!
