Roasted cauliflower with balsamic

Good food and taking care of your health go very well together. Cauliflower is packed with vitamins and minerals, antioxidants and fiber, which support digestion. This recipe where you glaze and roast the cauliflower in balsamic vinegar is super delicious!

Ingredients:

  • A large cauliflower

  • 250 gr cherry tomatoes

  • One medium sized onion, cut into wedges

  • 250 gr of green beans

  • 3 tablespoons of extra virgin olive oil

  • 225 ml balsamic vinegar

  • 20 gr coconut blossom sugar

  • 2 tablespoons fresh chopped parsley, for garnish

  • Pepper and salt

Preparation

Before you begin, preheat the oven to 400 degrees. In the meantime, you can cut the leaves and stem of the cauliflower so that the cauliflower stays flat. Then place it in a large oven dish and place the cherry tomatoes, onion parts and green beans around it. Season the vegetables with salt and pepper and brush with oil.

After doing this, whisk the balsamic vinegar and coconut blossom sugar in a small saucepan over medium heat. Bring to a boil and let it simmer for about 15 minutes. Then you spread the mixture on the cauliflower with a brush and keep some of it to baste it.

Then place the baking dish in the oven until the cauliflower is golden brown and soft. This takes about an hour to an hour and a half. Baste regularly with the mixture of balsamic vinegar and coconut blossom sugar. Garnish with parsley before serving.
