Do you fancy a pita gyros or kebab, but would you rather not eat meat today? We have a wonderful alternative and that is a pita with fried oyster mushroom. Give this one a try because it's super tasty!
Ingredients
300 grams of oyster mushrooms (or a wild mushroom mix, but make sure there are oyster mushrooms in the mix aswell for the meaty bite)
1 onion
2 tsp shawarma spices
2 tbsp soy sauce
2 tbsp olive oil
2 pita's
1/2 cucumber
1 handful of dill
1 handful of mint
4 tbsp Greek yogurt
1 garlic clove
2 hands of baby spinach
Preparation
Cut the oyster mushrooms into strips and the onion into rings. Heat the olive oil in a frying pan and fry the onion for 3 minutes. Add the oyster mushroom strips and fry over medium heat for a few more minutes. Add the shawarma spices and soy sauce and fry everything on low heat for another 5 minutes.
Toast the pita breads in the toaster or bake them in the oven.
Cut the cucumber into slices and finely chop the mint and dill. Make the garlic sauce by mixing the Greek yogurt with 1 tbsp water, crushed garlic and the sliced dill. Stir well.
Fill the pitas with the oyster mushroom shawarma, spinach, cucumber slices, chopped mint and the garlic sauce. Enjoy your meal!
Tip: do you prefer this dish to be completely vegan? Replace the Greek yogurt with hummus or a vegan mayonaise.
