INGREDIENTS (for 4 wraps)
4 Lebanese wraps
400 gr chickpeas
3 cloves of garlic
1 onion
1 hand parsley
1 tsp cumin
Salt and pepper to your liking
1 tbsp wheat flour
4 tbsp Greek yogurt
50 grams of spinach
Tomatoes and / or cucumber
PREPARATION
Cut the onion and two cloves of garlic and fry for a few minutes in a pan with oil. Then drain the chickpeas and mix this together with the garlic-onion mixture, the wheat flour, two-thirds of the parsley and the herbs in a food processor. Make with your hands about 12-16 squashed balls and bake the falafel in a pan with oil until golden brown. Continue to turn them over regularly.
For the dressing, mix the Greek yogurt with the clove of garlic and the remaining parsley. Season with salt and pepper.
Cover the wrap with a few leaves of spinach, tomato and cucumber or another vegetable of your choice. Place about 3 or 4 balls of falafel on the vegetables and finish with the dressing. Bon appétit!
