Beetroot latte

This vibrant latte is so creamy, earthy and sweet, made wholesome with roasted beets and gooey Medjool dates. You may have already seen this trend: the pink latte. A latte made with beetroot instead of coffee. Not only does it look very pretty, it is also super healthy. Magnesium, potassium, fiber, phosphorus and iron: you can find it all in beetroot. It is also a rich source of vitamins A, B and C, beta-carotene and folic acid.

Ingredients

  • 500 ml of plantbased milk

  • 1 large beet, steamed or boiled

  • 2 Medjool dates

  • Cinnamon stick

  • Vanilla extract

  • Agave syrup or maple syrup

Preparation

Put the milk, beet, dates and a few drops of vanilla extract in a blender and blend for a minute. Then put the drink in a saucepan and put on medium heat. Add a cinnamon stick and heat. Do not bring to a boil.

Taste and add some more syrup to taste, depending on how sweet you want your beetroot latte. Pour into a cup and enjoy!
