Avocado spread and bread

This is a delicious recipe if you want to treat yourself or someone else to a delicious brunch or lunch at the weekend. Avocado and egg are a golden combination as a sandwich filling, but by turning the avocado into a spread, you take your sandwich filling to the next level.

INGREDIENTS

  • 2 avocados

  • 1 spring onion

  • Half a lemon

  • Handful of fresh basil

  • 2 eggs

  • Two slices of wholegrain sour dough bread with seeds

  • Pepper and salt

PREPARATION

Boil the eggs for 5 minutes until done. If you like hard-boiled, boil the eggs for 8 minutes.

Crush the avocado in a bowl, chop the spring onion and basil finely and add to the avocado. Squeeze the lemon and stir the mixture together. Season with salt and pepper. Add chilli flakes for a slightly spicy taste.

Cover the slices of bread with the avocado salsa and place an egg half on top. Then sit down and enjoy.
